About the Beer Cellar
The interplay between beer, wood and other flavours is fascinating and to us it is an obsession. The Siren Barrel Cellar is a voyage of discovery, experimentation, temptation and free expression.
The crazy invention that is Limoncello IPA, the collaboration between Siren, Hill Farmstead & Mikkeller, has been aging in bourbon barrels. The infusion of the oak and bourbon has added huge layers of complexity and hits the spot as a Whiskey Sour. Slice of orange and a cherry anyone?
Bourbon Aged Broken Dream
Soaking up the bourbon flavours, Broken Dream is drinking in the vanilla aroma to accentuate her chocolate notes. Experimenting withJack Daniels, Buffalo Trace & Jim Bean Barrels & Heaven Hill, each one leaves a different mark on her. Look out for our Grand Cru, a blend of all four barrels aged on cherries
Following the success of our first anniversary, Maiden 2014, the first beer to be brewed, again an american style barley wine has been left to mature in the same barrels from Maiden 2013 with 10% of that years brew to add complexity, but with further barrels added to the mix.
Banyuls, Red Wine, and others are all working very different magic and highlighting very different flavour profiles in each barrel. The goal is to bring them together in a year in a truly unique blend in a way that greatly improves the sum of the parts.
An imperial stout brewed with liquorice root and dark muscovado sugars rest in 3 different barrel types ready for blending together to create a unique flavour profile. The coming together of Banyuls, Brandy & Bourbon with a dash of Liquid Mistrress will make this complex beer a keeper.
Liquid Mistress & Red Wine
The subtle silky tannins of Pinot Noir are building a good base to layer the raspberry & blackberry fruit impact from the barrels to Liquid Mistress. The addition of wild yeast (brettanomyces) adds a tart dark cherry to the mix.
Oak, soft stone fruits and Brettanomyces combine well with the body of Undercurrent to take you to a place you haven’t been before.
Red Wine Broken Dream
The addition of Brett and Red Wine Barrels accentuate the sweet dark cherry flavours which work very well with this highly complex beer.
Golden Ale & Grand Marnier
Yet to be named – this 8% golden strong ale, heavily hopped is soaking up all the chocolatey orange flavours of Grand Marnier Barrels.
Bones Of A Sailor Part ii
We couldn’t resist this fabulous porter getting the barrel treatment, its deep dark raisin base was crying out for something. Banyuls is a fortified sweet french red wine and the harmony with this beautiful malty beer is sublime
Gordon’s Strong Aged in various barrels
Gordons is a beautiful “wee heavy” beer, currently soaking the flavours of various oak barrels including bourbon & brandy. It has already been used to good effect in a number of blending projects we have carried out. Who knows how this will be released.
