CARIBBEAN CHOCOLATE CAKE
The beer that started it all. Caribbean Chocolate Cake is a dense, rich and luxurious stout. Hand-roasted cacao nibs give hints of tamarind and soft lemon, along with a beautiful chocolate bass line. The malts provide coffee and roast notes in abundance, while the hop profile adds orange and coconut flavours. Spinning on Cypress wood is the icing on the cake - offering lightly toasted vanilla wafers and delicate tannins, balancing the inherent sweetness of the beer. Pure canned indulgence.

CARIBBEAN WHITE CHOCOLATE CAKE
Following on from Caribbean Chocolate Ginger Cake last year, we were keen to include a wildcard in this year’s collection, and what could provide a bigger plot twist than a white stout? Taking white chocolate as the inspiration, we began work on a recipe to excite and confuse the senses. Some of the flavour profile in this beer will be familiar, with cacao nibs, husks and Cypress wood working their magic. A carefully curated malt base is boosted with more lactose than usual to keep the body smooth and thick, while vanilla additions bring the white chocolate sensations. The beer is finished with red berry notes accenting the finished creation.

DEATH BY CARIBBEAN CHOCOLATE CAKE
Death by Chocolate Cake. What would happen if we took one of the nation’s best loved, super-indulgent desserts for inspiration, and applied it to our most indulgent beer? Even more cacao nibs, even more cacao husks, even more lactose, even more wood. It’s doubled down and ramped up to imperial strength. New this year is the addition of Amburana wood. These spicy, fragrant spirals have imparted all kinds of flavours, not dissimilar to the complexity of tonka beans, making the beer a truly unique experience.

BARREL AGED CARIBBEAN CHOCOLATE CAKE
It just wouldn’t be a complete collection without utilising the skills of barrel manager Steve, and of course, some of the finest oak barrels in our cellar. The art of ageing in wood vs spinning on wood comes with subtle differences that we just love exploring. We brewed a base beer in 2018 that was spun for 72 hours on cacao and Cypress prior to filling a mixture of Buffalo Trace bourbon and rye barrels. This is a long process, and we were keen to begin layering flavour from the early stages. After picking up spice, caramel and spirit notes from the barrels, along with oak tannins, we then spun again for 72 hours on the adjuncts. This pre-release addition gave us a fresh vibrancy of flavour and aroma to a beautifully matured beer. Barrel Aged CCC is a labour of love that requires constant tasting throughout and a deft touch to blend.
