AGED BLACKBERRY AND SAGE BLENDED SOUR ALE
Old for new. For this beer, OverWorks travelled to Siren Craft Brew to select white and red wine casks, some as old as four years. Then the guys journeyed to Scotland to choose from the young barrels at OverWorks. The results were balanced at OverWorks and refermented on local Elgin blackberries and Italian culinary sage. Yielding a complex, rustic beer that is not just a blend of barrels, but a blend of tastes, times and dedication to craft.
This is collaboration at it's most powerful and fundamental.
